Fundamental Hospitality is looking to appoint an experienced General Manager to lead GAIA Marbella, our renowned Greek-Mediterranean dining concept.

This is an exciting opportunity for a driven hospitality professional with a strong background in luxury dining and premium restaurant operations. The successful candidate will oversee all aspects of the venue, lead and develop a high-performing team, and ensure the delivery of exceptional guest experiences while driving operational excellence and commercial performance.

Key Responsibilities

- Oversee the overall restaurant operations, ensuring the highest standards of service, food quality and guest experience.
- Lead, motivate and develop the management team and wider workforce.
- Drive operational excellence across all departments, maintaining consistency with brand standards.
- Manage financial performance, including budgets, P&L;, revenue, labour costs and operational expenses.
- Develop strong relationships with VIP guests and maintain a high level of personalised guest engagement.
- Monitor guest feedback and implement initiatives to continuously improve the overall experience.
- Work closely with the culinary, marketing and senior management teams to support business objectives.
- Oversee recruitment, training,



performance management and succession planning.
- Ensure compliance with all relevant health, safety and local regulatory requirements.
- Identify opportunities to increase revenue, improve profitability and strengthen the restaurant's market position.

Requirements

- Proven experience as a General Manager within luxury restaurants or premium dining establishments.
- Strong background in high-end dining, ideally within internationally recognised restaurant concepts.
- Demonstrated experience managing large teams and high-volume restaurant operations.
- Strong financial acumen, including P&L; management, budgeting and cost control.
- Excellent leadership, communication and interpersonal skills.
- A strong understanding of VIP guest management and luxury service standards.
- Ability to work in a fast-paced, demanding environment while maintaining exceptional standards.
- Fluent English is essential; Spanish would be a strong advantage.
- The right to work in Spain is required.
