Main Responsibilities
- Manage the daily operations of the hotel’s restaurants and bars.
- Ensure that service strictly complies with Sheraton brand guidelines and Marriott standards.
- Supervise and enforce international food safety and hygiene protocols (HACCP).




- Evaluate guest feedback on internal and external platforms, implementing immediate action plans to correct service deficiencies.
- Collaborate with the Food and Beverage management team to identify problem areas and develop strategies to improve departmental performance.
- Develop, implement and monitor the annual budget, monthly forecasts and departmental costs.
- Monitor vigente and projected departmental sales to ensure that revenue targets are met or exceeded and that opportunities are identified and addressed.
- Control labour cost ratios and inventory levels.
- Manage and adjust departmental labour costs according to seasonal fluctuations in occupancy.
- Design strategies to increase the average spend per guest.
- Lead, motivate and develop the team of middle managers.
