At La Cabra we're looking for a Pastry Chef to join our team in Madrid, Spain.

About The Role

Reports to: Head Baker / Bakery Manager / GM

The Pastry Chef will work closely with the Head Baker and with fellow bakers. The role will perform various duties and procedures within the location. They must execute various duties to the highest level to ensure quality standards are reached and maintained. They are the team member closest to the preparation of all baked goods and should display keen attention to detail and consistency.

Key Responsibilities

Production & Quality

• Be part of the daily bakery operations, ensuring production meets demand while maintaining the highest quality standards.
• With guidance from the Head Baker, help maintain operational standards and quality control of all bakery products.
• Execute dough mixing, fermentation, shaping, proofing, and baking with attention to detail and timing.
• Oversee and execute daily pastry production, ensuring consistency in quality, flavour, texture and presentation.




• Maintain La Cabra's quality standards across all pastry products.
• Work with a range of pastry techniques, including creams, mousses, fillings, choux pastry, cakes, tarts adapted for bakery retail.
• Ensure proper handling, storage and rotation of ingredients and finished products.
• Monitor production processes and identify opportunities to improve efficiency and reduce waste.

Required Skills & Experience

• Previous professional experience in pastry production, preferably within a high-quality bakery, pastry shop, restaurant or hospitality environment.
• Experience working with laminated pastry fillings, creams, choux, tarts, cakes and other bakery-related desserts.
• Good understanding of ingredients, flavour balance, textures and presentation.
• Ability to work independently while collaborating effectively with a team.
• Strong organisational skills and attention to detail.
• Ability to maintain consistent quality in a fast-paced product
