As a dining and sunset terrace destination, Kena blends Japanese-Peruvian culinary traditions with cocktails and vibrant social energy. To deliver exceptional culinary execution from opening, we are seeking a passionate, technique-driven Line Cook (Cocinero/a de Línea) in Marbella, Spain .
In this core kitchen role, you will execute menu recipes with precision, consistency, and respect for ingredients. Specifically, you will manage your station independently, execute daily prep, control food waste, supervise kitchen assistants, and maintain high standards of presentation across every service.

Your Mission: Culinary Precision & Station Mastery
Your primary goal involves translating menu recipes directly to the plate with consistent high quality. To achieve this, you will execute Nikkei dishes with speed and technical accuracy. At the same time, you will keep your station organized and waste minimal. Therefore, you will handle prep production, execute opening and closing checklists, direct kitchen assistants, and maintain pristine workstations. As a result, you will eliminate kitchen bottlenecks and protect our restaurant’s reputation for Nikkei dining excellence.
Your Key Responsibilities:
- Nikkei Culinary Execution: Prepare dishes from the Nikkei menu following technical recipe sheets and presentation standards. Furthermore, maintain strict consistency in taste, texture, and visual plating throughout service.
- Autonomous Station Management: Manage your station end-to-end, including mise en place, daily production schedules, live service, and closing procedures.
- Prep Planning & Waste Control: Plan ingredient prep in advance for swift service execution. In addition, monitor product yields,
prevent kitchen waste, and communicate any food quality incidents to supervisors.
- Team Guidance & Assistant Direction: Assign and organize daily tasks for Kitchen Assistants (Ayudantes de Cocina) as directed by the Head Chef.
- Checklists, Inventory & Cleaning: Complete station opening and closing checklists daily. Moreover, support the Chef de Partie with monthly inventory counts, supply orders, and workstation sanitation post-service.
Who You Are: The Dedicated Line Cook
- Proven Foundations: You bring at least 2 years of experience as a Line Cook in high-end dining establishments or Michelin-recognized restaurants.
- Culinary Expertise: You possess strong knowledge of Nikkei cuisine, Peruvian culinary methods, and Japanese preparation techniques.
- Educational Background: You hold a Vocational Degree (Grado Medio or Superior) in Culinary Arts/Gastronomy or equivalent, along with a valid Food Handler Certificate (Carné de Manipulador de Alimentos).
- Technical Skills & Languages: You feel comfortable working with Microsoft Office tools. English proficiency and knowledge of other languages are considered a valuable plus.
- Key Competencies: You demonstrate technical knife skills, speed under pressure, respect for ingredients, and strong teamwork.
