In this specialized culinary role, you will prepare sushi menu items with precise knife technique and consistent presentation. Specifically, you will manage your station's daily mise en place, interact naturally with guests at the sushi counter, and oversee fish preservation and traceability standards. By doing so, you will ensure an extraordinary gastronomic journey across every shift.

Your Mission: Nikkei Precision & Sushi Counter Mastery
Your primary goal involves driving culinary success across our luxury rooftop restaurant. To achieve this,



you will execute sushi preparations with precision and care. At the same time, you will keep station organization pristine and food safety rigorous. Therefore, you will handle Japanese fish cuts, engage warmly with bar guests, execute station opening/closing checklists, and maintain fish traceability. As a result, you will eliminate service delays and protect our restaurant's reputation for Nikkei dining excellence.
Your Key Responsibilities: Sushi & Nikkei Preparation: Craft every menu piece (Sushi, Sashimi, Nigiri) according to technical recipe sheets and brand standards. Furthermore, apply authentic Japanese cutting techniques tailored to each fish and seafood species.
Autonomous Station Management: Manage your station's complete mise en place independently, including sushi rice preparation, knife cuts, garnishes, sauces, and plating.
