Grupo Mambo, one of Ibiza’s leading family-owned restaurant and hospitality groups, is looking for a Director of Operations to lead the Group’s operations and play a key role in its next stage of development and growth.

We operate more than 16 businesses across the island, with restaurants at the heart of the Group and a diverse portfolio of concepts ranging from iconic venues such as Café Mambo to premium, experience-led destinations including Casa Maca, Cala Gracioneta, Sa Capella and Hostal La Torre .

Our challenge is to continue evolving while maintaining a strong, profitable and efficient operation across the entire portfolio.

What are we looking for?

We are looking for a senior Operations leader with a strong business mindset and a highly visible, hands-on presence in the field , with experience in multi-site restaurant, hospitality or F&B; environments.

Someone capable of combining P&L; ownership, productivity, operational discipline and a strong results orientation with a genuine sensitivity to guest experience, product, service and the individual identity of each concept.

We are not simply looking for someone to oversee operations. We need a leader with sound judgement, decisiveness and strong leadership skills; someone who understands what is really happening across the businesses, mobilises Managers and ensures that plans translate into execution and results.

What will your key responsibilities be?

- Lead operations across the Group’s portfolio , maintaining a close, frequent and visible presence across our venues.
- Lead,



support and develop our Restaurant Managers , building strong, autonomous and results-driven teams.
- Take ownership of the operational and financial performance of the portfolio , ensuring delivery against sales, profitability and productivity targets.
- Maintain rigorous oversight of key business indicators, including sales, P&L;, labour costs, cost of goods, productivity, margins and operational KPIs .
- Analyse performance gaps, identify root causes and ensure the definition and execution of clear, actionable improvement plans .
- Optimise organisational structures, staffing levels, processes and ways of working, balancing efficiency, service quality and guest experience .
- Ensure high standards of operations, service and product while respecting the identity of each concept and recognising that different venues require different operating models and priorities.
- Establish a consistent management discipline across the portfolio, ensuring clear objectives, reliable information, defined priorities and systematic performance follow-up.
- Work closely with the Managing Director and central functions to ensure coordinated execution of the Group’s business priorities.




- Play an active role in the evolution of existing concepts, new openings and future growth projects , helping strengthen the organisation and prepare it for its next stage of development.

The profile we are looking for

- Proven experience in senior Operations roles within multi-site restaurants, lifestyle hospitality or premium businesses with a strong F&B; component .
- Experience managing multiple venues, Restaurant Managers and large teams simultaneously, while remaining close to the day-to-day operation.
- Strong command of P&L; management, budgeting, productivity, costs, margins and key restaurant performance indicators .
- Strong guest orientation and sensitivity to the elements that create a premium experience: service, product, atmosphere and consistency with the concept .
- Ability to combine high standards and operational discipline with leadership, influence and people development .
- Experience in new openings, seasonal businesses and growing organisations will be highly valued.
- High level of English.
