Preparar con antelación el material y el equipo necesarios para la elaboración de los platos. Dirigir a la brigada de pastelería, incluyendo a los cocineros y ayudantes de cocina. Limpiar y reponer su área de trabajo. Entrenar, aconsejar y disciplinar al personal que infrinja las políticas del hotel y los procedimientos del departamento, proporcionando comentarios constructivos para mejorar el rendimiento.
