Under the supervision of the responsible researchers, the postdoctoral researcher will contribute to the development and nutritional characterization of barley-based extruded products intended for incorporation into experimental diets for preclinical animal studies evaluating their potential effects on intestinal health and colorectal cancer prevention.
The researcher will prepare and mill the selected cereal raw materials and produce the extruded products using a twin-screw extruder. They will also carry out or coordinate the compositional and nutritional analysis of the raw materials and processed products, including the determination of proximate composition and key bioactive constituents, particularly β-glucans, arabinoxylans, starch fractions, and phenolic compounds. The resulting data will support the formulation of barley-enriched and control diets with comparable energy density and macronutrient composition across experimental groups.
The postdoctoral researcher will also document and analyze the experimental results, ensure the traceability of samples and processing conditions, prepare the relevant technical documentation, and coordinate the delivery of the extruded products and diet formulations to the research team responsible for preclinical animal studies.

Requirements
- PhD in Food Science and Technology or a related field
- Research experience in food processing and nutritional characterization.
- Experience in cereal extrusion will be highly valued.
- Knowledge of food composition analysis and bioactive compounds.
- Good command of English and ability to work in a multidisciplinary team.
