About the Role
As Sous Chef – Fish Preparation, you will lead a dedicated team of 2–3 professionals in managing the entire fish process—from filleting and portioning to precision cooking and final plating at the ship’s main fine-dining venue.
You’ll work in a high-end, fast-paced galley environment, delivering consistent quality and creativity, while ensuring that hygiene and safety standards are met to perfection.
Key Details
- Contract: 5 months onboard / 2 months off
- Schedule: 10 hours per day, no days off (standard cruise contract)
- Cabin: Private single accommodation onboard
- Salary: USD $4,500 per month (tax-free, paid only while onboard)
- Opportunities: Clear path to promotion into Senior Sous or Chef de Cuisine
Your Responsibilities
- Lead the fish station with full ownership—from raw product handling to final plating
- Supervise and mentor your small team with precision, motivation, and care
- Ensure top standards of hygiene, food safety, and presentation
- Collaborate with other sections to maintain smooth operations in the main galley
- Execute consistent mise-en-place and preparation for high-volume luxury service
What We’re Looking For
- Experience: 3+ years in fine dining, luxury hotel, or cruise ship as Sous Chef
- Skills: Deep knowledge of fish and seafood, strong knife skills, plating finesse
- Documents: Valid STCW, C1/D Visa, Seaman’s Book & Medical (or willingness to obtain)
- Languages: Fluent English, with excellent communication skills
- Character: Professional, driven, calm under pressure, and passionate about quality
